Before you cook

Ingredients

  • 4 large eggs (Keep refrigerated; discard cracked eggs. Wash hands and tools after handling shells.)
  • 2 cups canned diced tomatoes (Include juices. Check package labels; use the specified dietary version and check additional allergens and cross-contact notices.)
  • 1 small bell peppers (diced)
  • 1/2 medium yellow onion (diced)
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon red pepper flakes

Cooking instructions

  1. Heat the olive oil in a deep skillet on medium. Cook the yellow onion and bell peppers for 5 minutes until softened.
  2. Stir in the ground cumin, smoked paprika and red pepper flakes, then the canned diced tomatoes. Simmer for 6 minutes until slightly thickened.
  3. Make four hollows. Crack the eggs one at a time into a cup, then slide into the sauce. Cover and cook on low for 7–9 minutes until whites and yolks are set and the eggs reach 74°C/165°F.
  4. Wash raw-egg tools. Serve two eggs and half the sauce per person while hot; extend gentle cooking if the centers are not set.
