Before you cook

Ingredients

  • 12 ounces raw boneless skinless chicken thighs (340 g Thawed in the refrigerator; not frozen.)
  • 2 medium potatoes (450 g, 1/2-inch cubes)
  • 2 cups green beans (trimmed)
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon fine salt

Cooking instructions

  1. Heat the oven to 425°F/220°C. Toss the potatoes with half the olive oil and half the fine salt on a rimmed sheet pan.
  2. Coat the raw boneless skinless chicken thighs with the remaining oil and salt, lemon juice and dried oregano in a separate bowl. Place beside the potatoes; wash the raw chicken bowl and tools.
  3. Roast for 20 minutes. Turn the potatoes and add the green beans to the pan.
  4. Roast for 10–15 minutes more until the potatoes are tender and each chicken piece reaches 74°C/165°F. Check the vegetables are cooked through where chicken juices touched them; serve using clean utensils.
