Before you cook

Ingredients

  • 3/4 cup dry long-grain white rice (Check package labels; use the specified dietary version and check additional allergens and cross-contact notices.)
  • 1 cup frozen green peas (Check package labels; use the specified dietary version and check additional allergens and cross-contact notices.)
  • 3 cups gluten-free vegan vegetable broth (Check package labels; use the specified dietary version and check additional allergens and cross-contact notices.)
  • 1/2 medium yellow onion (finely diced)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley (chopped)

Cooking instructions

  1. Heat the gluten-free vegan vegetable broth to a simmer in a small saucepan and keep warm.
  2. Heat the olive oil in another saucepan on medium-low. Cook the yellow onion for 4 minutes, then stir the dry long-grain white rice for 1 minute.
  3. Add the warm broth a half cup at a time, stirring often and allowing each addition to mostly absorb. Continue for 20–25 minutes until the rice is tender; add the frozen green peas with the final broth addition.
  4. Remove from heat, stir in the lemon juice and fresh parsley and serve while loose and creamy.
